- A nakiri knife is a Japanese vegetable knife with a flat, rectangular with no curve blade and double bevel edge.
- This lets you cut all the way down to the board in one straight push. It cuts plants cleanly using a straight push-down motion instead of a rocking chop.
- It is light, thin, and sharp, but it cannot cut bones.
- Use: It is great to slice, chop, and mince fruits and vegetables.
- Granton edges: Often has small indentations (hollow ground) to stop food from sticking.
